Tasting notes: Apple, Peach, Brown Sugar
Produced by Karin De La Rosa at the Mount Totumas cloud forest reserve, this Yellow Catuai uses the Milkyway process. This involves a 48-hour spring water soak followed by 24 hours of sealed fermentation, resulting in a clean, high-altitude cup with sweet notes of apple and peach.
This lot is Yellow Catuai rather than Geisha, with a preparation recorded as Milkyway washed. Its apple and peach notes are accompanied by brown-sugar sweetness. The combination offers a different expression of Panamanian coffee from the intensely floral Geisha lots in Hatch’s range.
